The Recioto is a typical wine from the Valpolicella, a direct descendant, like the Amarone, from the "Acinatico" produced in the distant IV century AD. In a letter addressed to the senators of the Venetian Canonicato, Cassiodoro depicted the Recioto as: "A pure wine, of royal colour and special taste. You could characterize it as a pulpous liquid or an eatable drink." The colour is dark garnet red, but bright, the perfume penetrating and continuous with the aroma of iris and violet; they evoke the odours and the images of the immaculate country: the twilight which is reflected in the sky at sundown, the perfume and the strength of the nature in spring, the rugged and thirsty earth. It is a perfect marriage between old-age dignity, virility and feminine grace, expressed by a full and complete, round, fragrant taste, corpulent but distinguished and balanced at the same time, of firm tone, living, in its decisive sweet vein. It is a very appreciated wine, obtained in small quantities by a complex and natural method, without being filtered. To be served at a temperature of 17°C, it may be preserved to a maximum of five years at low temperature.
