Bagoss (Bagòss) Produced by artisanal cheese-makers using only milk from the Bagolino Valley (Brescia) and aged in the typical cellars of the local cooperative dairy, the cheese has a cylindrical form and weighs an average of 16/18 kg. An aging period of over 24 months makes this cheese an outstanding example of the Brescia area cheese-making tradition. Semi-skimmed cow's milk is used to produce a hard table or grating cheese with a semi-cooked or cooked paste. CHARACTERISTICS: cylindrical form with an end diameter of 40 cm, 12/15 cm in height and with an average weight of 16/18 kg. Compact, hard, pale- yellow paste. Hard dark-brown rind.

Ingredients: Cow's milk, rennet, saffron.
Shelf life: 1 year
Conservations: In a cool place or in refrigerator.
