Monte Veronese DOP, seasoned 18 months, rare

Monte Veronese d'allevo is classified as a DOP (Protected Designation of Origin) cheese because it is only produced in a small zone in the province of Verona. Like the Asiago cheese, there are two versions: the first, more traditional version is made with skimmed milk and is a cheese that is suitable for long ripening; the second is a full-fat cheese that was introduced more recently in response to changing consumer trends. Monte Veronese is a typical cheese from the "malga" or mountain pastures of the Veneto region: the restricted area of production and traditional processing using raw milk make this cheese very special. Cooked, pressed paste. Annual production during the summer season (mountain pastures).

Maturing period of 18-24 months. Intense pungent flavour.

Ingredients: Raw skimmed cow's milk.
