Castelmagno d'Alpeggio DOP is a cheese whose roots lie in the age-old cheese-making culture, passed down to us from generation to generation. Production is still carried out according to the same rules that made this cheese so special, using only the thick, sweet-smelling milk from alpine pastures with its inimitable taste. It is during the period of aging that the cheese's qualities are enhanced: day after day, the paste dries and becomes fragile, its taste becomes savoury and its smell intense. Its appearance also changes with the crust taking on a brownish hue and although the basic shape of the forms (weight: 3-5 kg) remains cylindrical, the edges may become rounded off and the surface may acquire dips and hollows. These irregularities should not be considered as blemishes but as a positive qualities demonstrating the cheese's artisanal origin. These characteristics together with its strong personality make Castelmagno D.O.P. a very nutritional cheese which when eaten in small amounts can replace meat proteins in a controlled diet.

Ingredients: Cow's milk 100%, rennet, salt, bay-leaves.
